Turkey for One

Other people watch TV when they're bored--I tore apart a turkey today. This baby's been sitting in the freezer for a few months now, and I decided it needed to be put out of its misery. I left it in the sink last night, and when I got home from work today the meat had only half defrosted. It was soft enough to cut, but still frozen enough to be safe.

I cut the turkey into sections: legs and thighs connected, wings, and breasts taken completely off the bone. I roasted one breast today, seasoned a leg/thigh for tomorrow, and froze the rest in baggies for consumption over the next week or so.

This is a fun project; I don't know anyone who's ever eaten an entire turkey on her own.

Since I didn't have time to pre-season or brine it, the breast today was far short of perfection. All had time for was seasoning it with salt and pepper and sticking a few sprigs of fresh rosemary under the skin. However, I was careful not to cook it to over an internal temperature of 150, so after sitting a few minutes the middle was a perfect 160 and it didn't taste dry. I roasted some potatoes, leeks, a beet, and a carrot as a side. Not too shabby at all.

i opened up your site in my browser and my friend next to me told me it made her hungry. "no seriously, i'm starved for food now." naturally, i closed it, so we could go on with the lecture undisturbed.
