Pumpkin Ginger Cheesecake Pie
The name's a mouthful, but it smells simply delicious!
I followed the epicurious recipe pretty closely for this one, so just click herefor the recipe.
Don't make fun of my pie crust! I was too lazy to crush the gingersnaps into a fine meal, so they're more like cookie crumbles. Not my finest work, but who cares. Sometimes desserts can be ugly and tasty.

The pumpkin cheesecake is as good as it looks. Very creamy. So good. One of Pei's best creations (along with the muffins, cupcakes, the up-yours-Pinkberry yogurt, etc etc.) - T.
