Viktor Bene's Princess Cake
It's mine...it's all mine...
Apologies to my guests if this entire cake is gone by the time you get here tonight. It's just that good. I was going to make dessert, but I saw this on sale for $15 off because someone poked a hole in the marzipan. Hello? I'll eat it.

i've been curious about this for a while. What does marzipan taste like? and it's texture looks pretty dense/stiff. I've always liked cakes with a light/airy frosting like whipped cream.

Marzipan tastes like almonds. So if you've ever had almond jelly, or an almond Italian soda, that's what it tastes like.
The thing about princess cake is, the marzipan has to be fresh and rolled thin. That way it's pliable and gives the cake just enough flavor. If it's hard or thick, it just overpowers the cake.
I like it because the inside has a fluffy airy whipped cream layer, but the outside has flavor. I don't need the entire cake to be covered in whipped cream.

almonds. i just can't imagine it. i guess i'll just have to try some sometime.
so there is actually whipped cream under the marzipan? on the cooking shows they always show them just putting the marzipan directly on the cake. at least that's what i thought they did. maybe i'm remembering it wrong.

There's whipped cream between the cake layers, and sometimes in a dome under the marzipan (not in this particular cake, sadly).
A "real" princess cake is cake, jam, custard/whipped cream, cake, jam, dome of custard/cream, marzipan. And the whole thing looks round, like half a basketball. But like so many things, it has a lot of variations.
