Someone tell me why I should pay a florist $75-100 for this when it cost me $30 for both (not including vases)?

I know, lazy bride in me wants to just let someone else worry about it.

Super anal money saving bride wants complete control of flower situation, plus would like to save between $1,000-1,500.

Here are a few that I liked, for comparison's sake.

Oooh. Those look very pretty. Since you're getting married on a Sunday, they'll be plenty of us to help you make center pieces.
Looks wonderful! I adore flowers and arraging, so for me, I've actually said if I blow out anything for DIY wedding stuff, it would be flowers...
However, It does require a little bit of flexibilty and planning, but it does save you $$$$... especially on arrangements... but if you are SERIOUS about going this route, start practicing on Bouquets... that is actually a harder thing... especially since you will have to make several of them...

Yup! My next practice will be a bouquet.
Which of these three ways do you think is the easiest/best way to do an arrangment in a glass vase like I have: Assembling a "bouquet" in your hands, tying with wire, snipping, and putting it in the vase; using floral foam and sticking all the flowers in that; creating a grid with floral tape over the top of the vase and using the holes as slots for all the flowers.
I'm going to try all three and see what is best.
